The Tallgrass family, just making their way in the world, embarked on an amazing new adventure stemming from just a simple discussion about life. They were looking for change, for new purpose, and for the chance to make a bigger impact in their community. Tallgrass Meat Company was crafted out of the desire to cultivate an intimate, well-trusted and community-driven marketplace in Columbia, Tennessee.

Bringing together their combined expertise, Casey and Norm set forth to establish a well-honored trade in a setting hearkening back to the days of neighbors having deep connection to their roots, literally - knowing where their food comes from. Hard work and dedication have forged new beginnings with a dedicated butchery and marketplace rooted in serving their community "one steak at a time."

Forged in the fire of a small family-owned meat shop in Kansas, Casey Weber, Ph.D. comes to Tallgrass Meat Company with a strong professional background in nutrition and food safety. He values hard work and accountability which shows in his dedication to share his craft with his community.
